Watermelon Vidalia Salad
    Makes 12 servings
    Preparation time: 30 minutes

    Ingredients:

    1 watermelon, seeded and cut in large dices
    2 pounds Vidalia onions, julienne
    Chopped fresh mint leaves, optional
    1 C raspberry vinegar
    ½ C granulated sugar
    ½ C vegetable oil

    Preparation:

    Place watermelon, onions and mint, if desired, in a large bowl. Set aside.
    In a medium bowl, combine vinegar and sugar. Stir until sugar dissolves.
    Slowly whisk in oil to combine. Pour mixture over watermelon combination
    and toss to mix and coat well. Chill until ready to serve, stirring again to mix
    vinaigrette before serving.
